Well, I have returned to my allergy diet after taking almost a month long break. (Hey, I deserved it after going several months without a single intentional cheat!). I was craving sweets, so I searched online for a wheat free sugar free sweet recipe(sounds like an oxymoron, huh?) and found this site http://www.recipes4us.co.uk
Here’s my version of their recipe:
- Apple Mixture:
- 4 large Baking Apples
- 2 oz. raisins
- Lemon Spice Mixture:
- 2 T Lemon Juice
- 1 c Apple Juice
- 1/2 c Maple Syrup
- Large pinch Ground Cloves
- 1/8 t Ground Cinnamon
- Oatmeal Mixture:
- 1 c ground oatmeal (I ground it in a blender)
- 1/2 c apple juice
- 1/8 t Ground Cinnamon
- 1 pinch Ground Cloves
Instructions
- Preheat the oven to 375F.
- Slice the apples and place them in rectangular baking dish.
- Sprinkle the raisins over the apples and stir.
- In a small mixing bowl, combine lemon and apple juice with the spices and maple syrup and mix well.
- Pour lemon spice mixture over the apple mixture and bake uncovered for 40-45 minutes, basting frequently.
- Add the oatmeal mixture and stir well.
- Serve hot.
For those of you wondering how I made a sugar free recipe containing maple syrup, I used the all natural 100% syrup – no added sugar. This was a delicious recipe! Luke said it was better than ice cream!!! We will be making this again!!
