Apple & Oatmeal Cobbler

Well, I have returned to my allergy diet after taking almost a month long break. (Hey, I deserved it after going several months without a single intentional cheat!). I was craving sweets, so I searched online for a wheat free sugar free sweet recipe(sounds like an oxymoron, huh?) and found this site http://www.recipes4us.co.uk

Here’s my version of their recipe:

    Apple Mixture:

    • 4 large Baking Apples
    • 2 oz. raisins
    Lemon Spice Mixture:

    • 2 T Lemon Juice
    • 1 c Apple Juice
    • 1/2 c Maple Syrup
    • Large pinch Ground Cloves
    • 1/8 t Ground Cinnamon
    Oatmeal Mixture:

    • 1 c ground oatmeal (I ground it in a blender)
    • 1/2 c apple juice
    • 1/8 t Ground Cinnamon
    • 1 pinch Ground Cloves

Instructions

  1. Preheat the oven to 375F.
  2. Slice the apples and place them in rectangular baking dish.
  3. Sprinkle the raisins over the apples and stir.
  4. In a small mixing bowl, combine lemon and apple juice with the spices and maple syrup and mix well.
  5. Pour lemon spice mixture over the apple mixture and bake uncovered for 40-45 minutes, basting frequently.
  6. Add the oatmeal mixture and stir well.
  7. Serve hot.

For those of you wondering how I made a sugar free recipe containing maple syrup, I used the all natural 100% syrup – no added sugar. This was a delicious recipe! Luke said it was better than ice cream!!! We will be making this again!!
